Sprinkle the chicken with salt and pepper and in a large skillet heat the oil over medium heat. Add the chicken and cook for about 6 min on each side, then remove from the pan.
In the same pan stir in the shallots and cook until they become tender. Add the chicken broth and bring to a boil, then add the spinach and salt. Cook until the spinach is wilted, then stir in the sour cream and serve with the chicken.
