Easy Bulgarian casserole

Ingredients

  • extra virgin olive oil
  • 4 large eggs
  • 1 onion
  • salt, pepper and paprika per taste
  • 1 lb / 450 gr ground beef
  • 5 medium size potatoes
  • 1 carrot
  • 1 stalk celery
  • 1 red bell pepper
  • 1 tomato
  • 1 cup of water
  • chopped fresh parsley for garnish

Instructions

  1. In a big pan brown the ground beef and season with salt and pepper.
  2. Meanwhile arrange half of the sliced potatoes on the bottom of a clay cooking pot followed by half of the carrot, celery, red bell pepper, tomato and onion.
  3. Spread the brown ground beef over the vegetable in the pot and season with salt, pepper and paprika, then add another layer of potatoes, carrot, celery, red bell pepper, tomato, onion and again season with salt, pepper and paprika.
  4. Add water and a bit of olive oil, then cover with lid and bake at 450ºF/ 230ºC for about 30 min.
  5. Take the pot out of the oven and crack 4 eggs on the top of the vegetables. Bake for another 10 min until the eggs are set, then serve with the chopped parsley.

Note: do not pre-heat the oven because the clay pot may crack if you place it in already hot oven. Cook for 30 min from the time the temperature reaches 450ºF/ 230ºC.
