Italian sausage and pepper bake

Ingredients

  • 1 package precooked Italian turkey sausage
  • 1 red pepper, thickly sliced
  • 1 yellow pepper, thickly sliced
  • 1 packet cherry tomatoes, halved
  • 1 medium onion
  • 1 clove garlic
  • 1 tablespoon olive oil
  • 1 teaspoon dry oregano
  • salt and pepper per taste

Instructions

  1. Heat the oven to 400ºF / 200ºC.
  2. Toss the peppers, tomatoes, onion and garlic with oil oregano, ¼ teaspoon salt and ¼ pepper, then toss with sausages.
  3. Place on a baking sheet and roast until sausages are cooked through and vegetables are tender and golden brown – about 15 to 20 min.
