Mini meatloaves

Ingredients

  • 1 oz / 225 gr ground beef
  • 1 oz / 225 gr ground turkey
  • ⅓ cup old fashioned oats
  • 4 tablespoons ketchup
  • 1 tablespoon spicy brown mustard
  • 1 teaspoon soy sauce or Worcestershire sauce
  • ½ teaspoon fresh oregano
  • 2 large eggs, the whites only
  • 1 medium red onion
  • salt and black pepper per taste

Instructions

  1. Preheat the oven to 450ºF/ 230ºC and line a baking sheet with parchment paper or aluminium foil.
  2. In a large bowl gently combine the beef and the turkey by hand.
  3. In a small bowl stir together the oats, 2 tablespoons ketchup, ½ tablespoon of mustard, the soy/Worcestershire sauce, oregano, egg whites, onions, ½ teaspoon salt and ½ teaspoon black pepper until combined and add the oat mixture to the meat mixture and combine by hand until just incorporated.
  4. Form the meatloaf mixture into 4 small loafs, about 4 inches / 10 cm long and place them on a preheated pan. In a small bowl stir together the remaining 2 tablespoons ketchup and ½ tablespoon mustard and brush the mixture on each meatloaf. Bake until they are fully cooked – about 20 min.
  5. Sprinkle with additional fresh oregano if desired and serve.
