Pasta Bolognese

Ingredients

  • 2 tablespoons olive oil
  • 2 lb / 900 gr lean ground beef
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 onions
  • 4 cloves garlic
  • 2 teaspoons oregano
  • 2 teaspoons basil
  • 1 teaspoon red pepper
  • 4 cans of 15 oz / 425 gr crushed tomatoes
  • 4 tablespoons tomato paste
  • 32 oz / 900 gr pasta or spaghetti
  • fresh basil for serving

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook al dente according to the package instructions, then drain and reserve ½ cup of the pasta water.
  2. In a large, deep pan heat the olive oil, sdd the beef and season with salt and pepper. Brow the beef and break it into smaller pieces with wooden spoon until is cooked through.
  3. Add the onions and garlic and season with oregano, basil, crushed red pepper and sauté until they are softened – about 5 min. Add the crushed tomatoes, tomato paste, pasta water and mix to combine. Bring the mixture to a boil and then simmer on low for about 30 min.
  4. Toss the pasta with the Bolognese sauce and top up with fresh basil.
