Turkey meatloaf with feta and sun-dried tomatoes

Ingredients

  • ½ cup plain breadcrumbs
  • ⅓ cup parsley
  • ¼ cup chopped garlic and herb marinated sun dry tomatoes
  • 2 cloves garlic, minced
  • 2 eggs, lightly beaten
  • 2 tablespoons milk
  • ½ cup crumbled feta cheese
  • 1 ½ teaspoons salt
  • 1 teaspoon black pepper
  • 1 lb / 450 gr ground turkey

Instructions

  1. Place the oven rack in the center of the oven and preheat to 375ºF/ 190ºC. Brush a loaf pan with a little bit of oil to prevent from sticking.
  2. In a large bowl stir together the breadcrumbs, parsley, sun-dry tomatoes, eggs, milk, feta, salt, pepper and garlic, turkey and gently stir to combine.
  3. Transfer the mixture into the pan and bake for about 45 min, then remove from the oven and let it rest for about 5 min. Transfer to a cutting board, slice it, transfer to a platter and serve.
