In a food processor combine the garlic, rosemary, thyme, wine, oil, Dijon mustard and 1 tablespoon of the wholegrain mustard. Grind the mustard sauce until combined, about 30 sec and transfer to a small bow. Add the remaining 1 tablespoon of wholegrain mustard to the sauce and stir to combine, then set aside.
Preheat the oven and brush a baking sheet with a little bit of oil to prevent from sticking. Arrange the salmon filets on the sheet, sprinkle with salt and pepper and broil for 15 min.
Brush the mustard sauce over the filets and continue broiling until the filets are become golden brown – about 5 min longer.
Transfer the filets to a plate and serve with the lemon wedges.
