Chicken tights with shallots and spinach

Ingredients

  • 6 boneless, skinless chicken tights
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1½ tablespoon olive oil
  • 4 shallots
  • ⅓ cup chicken broth
  • 10 oz / 300 gr fresh spinach
  • ¼ cup reduced fat sour cream

Instructions

  1. Sprinkle the chicken with salt and pepper and in a large skillet heat the oil over medium heat. Add the chicken and cook for about 6 min on each side, then remove from the pan.
  2. In the same pan stir in the shallots and cook until they become tender. Add the chicken broth and bring to a boil, then add the spinach and salt. Cook until the spinach is wilted, then stir in the sour cream and serve with the chicken.
