Remove the stones from the dates and put them in a small saucepan with the honey. Bring to a boil, then transfer to a blender and mix until the texture become like a smooth paste and let it cool while you are getting the rest of the ingredients ready.
Roughly chop the walnuts and the dry apricots.
Put the oats, walnuts, dry apricots, sunflower seeds, coconut and chia seeds into a mixing bowl and add the dates paste. Mix everything together really well.
Line a baking dish with parchment paper, brush it with a little bit of oil and pour the granola mixture.
Put the tray in the oven and bake until the texture becomes lightly brown on the top – about 40 min.
