Greek salad

Ingredients

For the dressing

  • ¼ cup extra virgin olive oil
  • 3 tablespoons vinegar
  • 1 clove garlic
  • ½ teaspoon dried oregano
  • ¼ teaspoon Dijon mustard
  • ¼ teaspoon salt

For the salad

  • 1 cucumber
  • 1 green bell pepper
  • 2 cups cherry tomatoes
  • 5 oz / 140 gr feta cheese
  • 1/3 cup red onion
  • ½ cup pitted olives

Instructions

  1. In a small bowl whisk together the olive oil, vinegar, garlic, oregano, mustard and salt.
  2. In a big salad bowl mix the cucumber, green pepper, cherry tomatoes, feta cheese, red onions and olives. Drizzle with the dressing and gently toss, then sprinkle with oregano, salt and pepper to taste.
