Kale and apple salad

Ingredients

  • 3 tablespoons lemon juice
  • 1 tablespoon of extra virgin olive oil
  • 1 bunch kale, thinly sliced
  • ¼ cup dates
  • 1 apple
  • ¼ cup toasted almonds

Instructions

  1. In a large bowl whisk together the lemon juice and olive oil. Add the kale, toss to coat and let it rest for 10 min.
  2. While the kale is resting cut the dates into thin slivers and the apple into thin matchsticks, then add the dates, apple and almonds to the kale and toss to combine well.
  3. Pour into bowls and serve.
