Pear and walnut salad

Ingredients

  • ½ cup walnuts
  • 1 teaspoon apple pie spice
  • 2 tablespoons lemon juice
  • 1 ½ tablespoons extra virgin olive oil
  • ½ teaspoons salt
  • ¼ teaspoon black pepper
  • 2 stalks celery, chopped relatively small
  • 1 pear (best to use Bartlett pear), coarsely grated
  • 1 bulb fennel, coarsely grated
  • 1 spring onion, thinly sliced
  • small bunches of arugula with the thick stems discarded

Instructions

  1. On a baking sheet toss the walnuts with the apple pie spice and roast at 400°F / 200°C until they become fragrant (about 10 min), then chop them roughly.
  2. In a large bowl whisk together the lemon juice, olive oil, salt and pepper. Add the celery, pear, fennel and spring onion and toss to combine.
  3. Just before serving toss the arugula with the pear mixture and serve with the spiced nuts.
