Peas with lemon

Ingredients

  • 2 cups frozen peas
  • 2 garlic cloves
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon salted butter
  • ¼ teaspoon salt
  • black pepper per taste
  • zest of half lemon, optional

Instructions

  1. Rinse the peas under warm water and shake off the excess liquid.
  2. Peel and smash the garlic cloves.
  3. Add the butter and olive oil to a large skillet over medium-high heat. Add the smashed garlic and frozen peas and cook until warmed through but still bright green – about 2 minutes.
  4. Season with the salt, pepper and lemon zest if desired. Discard the garlic cloves and serve immediately.
