3lb / 1.3 kg sausage links, cut into ¾” / 2 cm slices
2 medium green peppers, cut into thin strips
2 medium red peppers, cut into thin strips
1 medium onion
1 tablespoon butter
1 tablespoon olive oil
3 tablespoons chicken broth
1 tablespoon fresh parsley
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon lemon juice
6 plum tomatoes
Instructions
In a large skillet cook the sausages over medium heat until they are no longer pink. Drain and add the green peppers, red peppers, onion, butter, olive oil, chicken broth, parsley, salt, black pepper and lemon juice.
Cover and cook until the vegetables are crisp – tender stirring occasionally, about 12 min. Add the tomatoes, heat through and Bon Appetit.
