Sauteed mushrooms with garlic

Ingredients

  • 1 lb / 450 gr white or brown mushrooms
  • 1 tablespoon soy sauce
  • 2 tablespoons of olive oil
  • 1 tablespoon butter
  • ¼ cup white wine, optional
  • 1 spring fresh thyme or a pinch of dry
  • 2 cloves garlic
  • chives for garnish

Instructions

  1. Clean the mushrooms by gently wiping with a paper towel, then slice into thick slices – about ½ inch.
  2. Add butter and oil to the pan and heat over medium high heat.
  3. Quickly toss the mushrooms & soy sauce (don’t do this step ahead of time because it will remove too much of moisture from the mushrooms), then add them to the pan and toss with the olive oil and butter. Cook for about 4-5 min without disturbing so they can get brown on one side.
  4. Add the white wine if you are using it and let it evaporate. Add the garlic and thyme and continue cooking for additional 3-4 min, stirring occasionally until cooked.
  5. Season with salt and pepper to taste.
