Whole wheat blueberry waffles

Ingredients

  • 1 ¼ cups all-purpose flour
  • ¾ cup whole wheat flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 ½ cups reduced fat milk
  • 2 large eggs, lightly beaten
  • ½ cup vegetable oil
  • 1 teaspoon pure vanilla extract
  • 1 cup blueberries, fresh or frozen
  • 1 teaspoon lemon or orange zest

Instructions

  1. Combine both flours, sugar, baking powder and salt in a large mixing bowl and whisk to combine, then add the eggs, milk, oil and vanilla. Whisk until the texture become smooth and add the berries and zest. Let it rest for about 5 min before using it.
  2. Preheat the waffle maker to the desired setting.
  3. Pour 2 cups of the mixture in the center of the lower grid of the preheated waffle maker and spread evenly, than close the lid. When ready carefully remove the waffle and repeat with the remaining mixture. For best results, serve immediately.
