Garlic sautéed spinach

Ingredients

  • 1 ½ lbs / 680 gr baby spinach leaves
  • 1 tablespoon extra virgin olive oil
  • 6 cloves chopped garlic
  • 2 teaspoons salt
  • 1 tablespoon unsalted butter
  • lemon

Instructions

  1. Rinse the spinach well in cold water and spin it dry in a salad spinner leaving just a little water clinging to the leaves.
  2. In a large pot heat the olive oil and sauté the garlic over medium heat for about 1 min but not until is browned. Add all the spinach and the salt to the pot, toss it with garlic and oil, then cover the pot and cook for 2 min.
  3. Uncover the pot and turn the heat on high and cook the spinach for another minute steering until the spinach is wilted.
  4. With slotted spoon transfer the spinach to a serving bowl and top it up with butter, squeeze of lemon and sprinkle of salt. Serve it hot.
