Pasta with roasted red pepper

Ingredients

  • 1 lb / 450 gr tube shaped pasta
  • ¼ cup heavy cream, reduced fat
  • ½ cup chicken or vegetable stock
  • 12 oz / 340 gr jar roasted red peppers, drained
  • 8 fresh basil leaves, plus ¼ cup minced for serving
  • ½ teaspoon salt
  • ¼ teaspoon red pepper
  • ¼ cup parmesan cheese

Instructions

  1. Bring a large pot of salted water to a boil over high heat. Cook the pasta until al dente according to the package directions.
  2. Meanwhile make the pasta sauce by adding the cream, stock, roasted red peppers, basil, salt and red pepper to a blender and mix until you reach a smooth consistency. Transfer the same to a large pot and bring to a simmer over medium – low heat. Stir in the parmesan cheese and the pasta and cook stirring until well combined and the pasta is warmed through – about 2 min.
  3. Remove from the heat and serve hot topped with parmesan cheese and fresh basil.
