Apple and walnut waffles

Ingredients

  • ¼ cup light brown sugar
  • 2 cups all-purpose flour
  • ⅓ cup whole wheat flour
  • ⅓ wheat germ
  • 4 ½ teaspoons baking powder
  • ¾ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 2 cups reduced fat milk
  • 3 large eggs, lightly beaten
  • ½ cup vegetable oil
  • ¾ teaspoon pure vanilla extract
  • ½ medium to large apple, peeled, cored and finely diced or shredded
  • ½ cup chopped walnuts

Instructions

  1. Pour the brown sugar into a large mixing bowl and add the flours and wheat germ, baking powder, salt and cinnamon. Whisk to blend and then add the milk, eggs, oil and vanilla. Whisk again until the mixture is just combined and stir in the apple and walnuts. Now let it rest for about 5 min before using it.
  2. Preheat the waffle maker to the desired setting.
  3. Pour 2 cups of the mixture in the center of the lower grid of the preheated waffle maker and spread evenly, than close the lid. When ready carefully remove the waffle and repeat with the remaining mixture. For best results, serve immediately.
