Baked baby potatoes with salt and rosemary

Ingredients

  • 2.2 lbs / 1 kg baby potatoes
  • 2 springs of fresh rosemary
  • 4 tablespoons olive oil

Instructions

  • Heat the oven to 425F / 220C.
  • Wash the potatoes and boil until they are almost tender, then drain them in a colander.
  • In a separate dish pick and bash the rosemary leaves.
  • Transfer the potatoes to a bowl and drizzle with few drops of olive oil, then add a teaspoon of salt, a little freshly grounded black pepper and the rosemary.
  • Put the potatoes in a roasting tray and cook in the oven until they become golden – about 25 min.

 

Tip: These potatoes can be a great addition to your barbeque. Once you complete step 4 wrap them in tin-foil and throw them on the barbie for about 25 min.
