Baked potato wedges

Ingredients

  • 2 lb / 900 gr potatoes, cut into wedges
  • 2 tablespoons extra virgin olive oil
  • 1 ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ¾ teaspoon onion powder
  • ¾ teaspoon smoked paprika
  • black pepper to taste
  • chopped parsley for sprinkling
  • grated parmesan cheese, optional

Instructions

  1. Preheat the oven to 425ºF / 220ºC and line 2 baking sheets with parchment paper.
  2. In a large bowl toss the potatoes with the olive oil, garlic powder, salt, onion powder, smoked paprika, several grinds black pepper and spread evenly on a baking sheet. Roast until they become tender and golden brown around the edges – about 40 to 45 min, flipping the potatoes and rotating the sheets in the oven around the 20 min mark.
  3. Sprinkle with the parsley, season with more salt and serve with desired dipping sauce.
