Egg salad

Ingredients

  • ¼ cup Greek yogurt
  • 1 teaspoon extra virgin olive oil
  • 2 teaspoons Dijon mustard
  • 1 tablespoon of green olives, finely chopped
  • 1 teaspoon lemon juice
  • 1 clove garlic
  • ¼ teaspoon turmeric
  • ¼ teaspoon salt
  • black pepper per taste
  • 6 hard boiled eggs
  • couple pinches celery seeds
  • 2 tablespoons fresh chives

Instructions

  1. In a small bowl whisk together the Greek yogurt, olive oil, mustard, green olives, lemon juice garlic, turmeric, salt and pepper. Mix the eggs, celery seeds and chives. Lightly mash the mixture so it’s not too chunky. Chill and serve on a slice of country bread.
