Preheat the oven to 350ºF / 180ºC. Arrange the turkey bacon on a baking sheet and bake until it become crisp – about 12 to 15 min.
Place the potatoes in a medium sauce pot and cover with cold water. Bring the water to a boil and season with salt. Cook until the potatoes become tender – about 15 min.
Drain and mash the potatoes with milk and season with salt and pepper. Fold in the bacon and sprinkle with chives, if you desire cheddar as well.
