Mashed potatoes with bacon

Ingredients

  • 2 lb / 900 gr potatoes
  • 6 slices turkey bacon
  • salt and black pepper per taste
  • 1 cup milk
  • ¼ cup fresh chives
  • ½ cup cheddar, optional

Instructions

  1. Preheat the oven to 350ºF / 180ºC. Arrange the turkey bacon on a baking sheet and bake until it become crisp – about 12 to 15 min.
  2. Place the potatoes in a medium sauce pot and cover with cold water. Bring the water to a boil and season with salt. Cook until the potatoes become tender – about 15 min.
  3. Drain and mash the potatoes with milk and season with salt and pepper. Fold in the bacon and sprinkle with chives, if you desire cheddar as well.
