Cook the rice according to the packet instructions.
In a large serving dish add the cooked rice, bell peppers, cucumber, cherry tomatoes, sweet corn, red onion, butter beans, spinach, sun-dry tomatoes, mixed olives, feta, pine nuts, fresh dill and mix to combine.
Finish with the olive oil, apple cider vinegar, honey, garlic, salt, black pepper and the juice of 1 lemon.
