Mediterranean salad with rice

Ingredients

  • 1 cup brown rice
  • 2 bell peppers
  • ½ cucumber
  • 7 oz / 200 gr cherry tomatoes
  • 3 ½ oz / 100 gr sweet corn
  • 1 red onion
  • 1 ¼ cups butter beans
  • 2 oz / 50 gr baby spinach
  • 2 oz / 50 gr sun-dry tomatoes
  • 3 ½ oz / 100 gr mixed olives
  • 2 oz / 50 gr feta
  • 2 oz / 50 pine nuts
  • ¼ cup fresh dill
  • 1 ½ tablespoon olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 2 cloves garlic
  • 1 lemon, the juice only
  • salt and pepper per taste

Instructions

  1. Cook the rice according to the packet instructions.
  2. In a large serving dish add the cooked rice, bell peppers, cucumber, cherry tomatoes, sweet corn, red onion, butter beans, spinach, sun-dry tomatoes, mixed olives, feta, pine nuts, fresh dill and mix to combine.
  3. Finish with the olive oil, apple cider vinegar, honey, garlic, salt, black pepper and the juice of 1 lemon.
  4. Mix everything well and serve.
