Peach and arugula salad

Ingredients

For the salad

  • 6 cups baby arugula
  • 2 ripe peaches, sliced
  • ½ cup feta cheese
  • ¼ cup pecans

For the balsamic vinaigrette

  • 2 tablespoons balsamic vinegar
  • ¼ cup olive oil
  • 1 teaspoon honey
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. In a large mixing bowl combine the arugula, peaches, feta cheese and pecans.
  2. To make the balsamic vinaigrette, combine the olive oil, balsamic vinegar, honey, salt and black pepper in a small bowl and mix until you reach a smooth consistency.
  3. Pour the dressing on top of the salad and toss to combine, then serve immediately.

Note: if you want to make this salad ahead of time prep the ingredients and make the balsamic dressing. Store them in separate airtight containers and when the time comes assemble the salad and pour in the dressing. Otherwise, the balsamic vinegar will start to soften the greens and peaches.
