Roasted parsnips

Ingredients

  • 2 lb / 900 gr parsnips, peeled and cut into rounds that are ⅓” / 1 cm thick
  • 1 tablespoon olive oil
  • 1 teaspoon dry oregano
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon dry basil
  • ¼ teaspoon marjoram

Instructions

  1. Preheat the oven to 425°F / 220°
  2. In a large bowl add the parsnips, olive oil, dried oregano, salt, garlic powder, onion powder, dry basil, marjoram and mix to coat.
  3. Place parchment paper on a baking sheet and spread a single layer of the parsnips. Transfer into the oven and cook until they become golden brown, flipping them halfway – about 30 min total cook time.
  4. Best is to serve them immediately.
