Spinach, strawberries, raspberries and blueberries salad

Ingredients

For the dressing

  • ⅓ cup plain low fat Greek yogurt
  • 1 tablespoon poppy seeds
  • 1 tablespoon Dijon mustard
  • 1 ½ teaspoon cayenne pepper
  • 1 tablespoon honey
  • ¼ cup milk

For the salad

  • ½ cup strawberries
  • ½ cup blueberries
  • ½ cup raspberries
  • ⅓ cup roasted walnuts
  • 6 oz / 170 gr fresh baby spinach
  • 2 oz / 60 gr goat cheese

Instructions

  1. In a small bowl whisk together the yogurt, milk, honey, mustard and poppy seeds and place in the fridge to cool while you are doing the salad.
  2. In a large bowl combine the spinach, strawberries, raspberries, blueberries and goat cheese. Pour the dressing over the salad and toss to combine.
  3. Best is to serve immediately.
