2 lbs / 700 gr zucchinis, peeled and cut into 0.6 in / 1.5cm slices
½ large onion, roughly chopped
2 cups chicken broth or veg broth
2 cups water
½ teaspoon garlic
½ teaspoon onion powder
¼ teaspoon black pepper
1 cup low fat milk
Soup add ins
1 tablespoon butter or olive oil
2 garlic cloves, minced
½ large onion, finely chopped
1 ½ cups carrot, peeled and finely diced
1 ½ cups celery, finely chopped
1 small red bell pepper, finely chopped
½ chicken breast, diced
¾ cup frozen peas
fresh thymefor garnish (highly recommended, or sub chives)
Instructions
Healthy creamy soup broth:
Place the zucchinis, onion, chicken broth, water, garlic, onion powder and pepper into a pot. Cover with lid and over medium high heat bring to a boil, then lower the heat to medium and simmer for about 15 minutes.
When the zucchinis become very soft remove from heat and add the milk. Blend the soup until smooth and add salt to taste.
Soup add ins:
In a large pot boil the chicken until fully cooked. Then in a separate large saucepan melt the butter over medium heat.
Add the garlic, onion, carrot and celery and cook for 3 minutes, then add the capsicum. Cook for another 2 minutes until onion is translucent and sweet.
Add the healthy creamy broth, chicken and peas. Bring to gentle simmer for just 2 to 3 minutes or until the peas are cooked. Taste and adjust the salt and pepper.
Ladle into bowls and sprinkle with a pinch of fresh thyme leaves.
