Spinach, carrot and fetta fritters

Ingredients

  • 1 large egg
  • ¾ cup plain flour
  • 2 carrots, grated
  • 2 cups baby spinach, blanched and finely chopped
  • 120 grams feta cheese, crumbled
  • ¼ cup olive oil

Instructions

1. In a medium bowl mix the egg, flour, carrot and spinach.

2. In a saucepan preheat the olive oil over medium heat.  Place the end of a wooden spoon into the oil while it is heating and when you start to see many small bubbles forming around it, drop tablespoonfuls of the mixture into the oil and flatten them slightly.

3. Cook each fritter for 4 minutes each side or until they turn golden, then drain on paper towel.

4. Best is to serve them warm with Tzatziki sauce.
